LM00DP70 Food and Environmental Chemistry (5 cr)
Prerequisites Not applicable
Objectives Student knows the basics of chemistry and microbiology and can define the chemical reactions and significance of the main nutrients. Student is able to perform basic measurements from the perspective of food and environmental analysis and to analyze the most important concentrations and microbial concentrations of substances in food, water and feed. Student masters safe working in the laboratory.

Organic chemistry of nutrients
Safe working in the laboratory and legislation
Microbes and the living conditions that affect them.
Sterilization, aseptic work and hygiene.

Functional foods
Basic laboratory measurements: eg moisture / dry matter, organic matter, nutrient content determinations, pH, conductivity, turbidity, dilution series and plate culture.
